Speaking as an now-forever-anonymous-to-here someone who has by now had to solve this particular problem in five (so far ...) different host-side programming environments – Perl, Python, PHP, Java, and Go – let me give you a bit of friendly advice.

"The client side" in this case consists of an entirely different programming ecosystem, which actually does not care what host-side language it is talking to. It only cares about the JSON that it sends and receives. Therefore, start with the demo web-pages provided by the vendor of the package. Use the debugging facilities of your favorite browser to observe e-x-a-c-t-l-y what that "JSON which works" consists of. Likewise the corresponding client-side JSON declarations.

But also, do not forget the third element which is in play here: the DOM structure created by your HTML. DataTables is absolutely intolerant of any discrepancy in "the number of columns in your table," whereas HTML is quite forgiving.

Snippets of code should be wrapped in <code> tags not <pre> tags. In fact, <pre> tags should generally be avoided. If they must be used, extreme care should be taken to ensure that their contents do not have long lines (<70 chars), in order to prevent horizontal scrolling (and possible janitor intervention).
