<h2>Trappist Ale</h2>

<h3>Pre brew day</h3>
<p>Start two batches of yeast starter from Trappist
yeast, three days before brew session starts.</p>
<p>
Pour 5 gallons boiling water in mash tun, add crushed
grains to mash tun maintain 152F for 60 minutes, sparge
at 170F collecting 12 gallons of wort.

<p>Bring wort to a rolling boil. Add candi sugar and boil for 30 minutes before
adding first infusion of
hops.. boil for 30 minutes more and add second infusion
of hops. Boil for 15 minutes more add last hop infusion
along with Irish Moss.
</p>
<p>Rapidly cool to 80F, aerate and put in two 5 gallon
carboys. Pour yeast starter into each carboy. Primary
fermentation should run for 10 days. </p>
<p>On bottling day prep two batches of 3/4 cup of corn
sugar in 1 cup of water, bring to a boil and add each
batch to the contents of both bottling buckets (assuming
your bottling bucket is 5 gallons like mine) and stir
very thoroughly.</p>
<p>Once bottled should be allowed to bottle condition for
at least two weeks and preferably 30 days before sampling.

<h2>Howling Cowdawg Wing Sauce</h2>
<p>This recipe is under development and is a work in
progress. Any thoughts or suggestions on how to improve
this will recieve polite attention. Not necessarily
implemented, but will recieve polite attention.</p>

<p>Place the first six ingredients in a blender
and puree. Once they have blended smooth (add more tequila or some dry white wine if more liquid is needed) place the
slurry in a saucepan. If you are using the optional
ingredients, add them now.
Add the chile powder, ketchup
and butter, bring to a boil. Simmer 20 minutes or until
reduced to the consistancy you want.

<p>Take a bunch of chicken or turkey wings and
seperate them at the joints. Reserve the tips for
another use (makes great broth) and put away.</p>
<p>Dust the wing sections throughly with a spice rub
of your choice. Let stand for at least 20 minutes and
let the rub do its thing. Either grill the wing sections
(easier on diets) or deep fry them. Place the cooked
wing sections in a large bowl and toss them with the
sauce. Enjoy with your favorite beer, iced tea or other
beverage of your choice.</p>
<p><b>NOTE:</b> One varient in this recipe is when I
participated in a cook off (took 2nd place) where
Jack Daniels was supposed to be a featured ingredient
I substituted JD for the tequila.</p>

<tr><td>1 bunch</td><td>fresh chives</td></tr>
<tr><td>2 Tablespoons</td><td>Creme' Fraische or
sour cream</td></tr>

<p>
Preheat oven to 350.
</p>
<p>Put sliced onions, butter and water in a heavy
skillet over high heat</p><p>Cook stirring frequently
until onions have caramelized (about 30 minutes)</p>
<p>While onions are cooking use a biscuit cutter and
cut out 2 1/4" to 2 1/2" rounds. Place them in a
mini-cupcake pan (12 cupcake cups), pressing the center of
each one to make a depression.
Bake until golden
brown, about 10 minutes.

<p>Combine the creme' fraische and chives.</p>
<p>When the shells have cooled place a small amount
of creme mixture in each shell. Place a small amount of
the onions in each shell.
