BBEdit all the way, except for the built-in FTP browser, which churns and churns and churns... However, when I'm near an SSH terminal, it's vim or vi. I like the fact that you can find them on 99.9% of *nix/BSD/OSX boxes.

BBEdit has been my friend too for many years. Almost since I started using Perl. Using it on Mac OS X is a joy.
A vi variant when I have no alternative.
